LIFE, FOOD AND ALL THAT'S GOOD! Vol. 1

Happy New Year! It’s going to be a great one!

We just returned from a fun-filled long weekend in Colorado. This trip was a discovery trek to find fun in the snow without hitting the slopes. Let it be known that I have never skied before! I have always wanted to, but have always been

intimidated. Now I can’t wait to return to the mountains and give it a shot! This is my year! Haha!

We stayed in a beautiful condo in Frisco that was so close to Keystone, Breckenridge and Copper Mountain. Bethany and her friend went dogsledding! They had a blast!! We all returned a few days later for a sunset snowmobile tour. WOW! Over 2 hours of great fun on the mountain and back trails. The last hour of our trip was after sunset, winding through the wooded trails. Good Times Adventures was a wonderful experience for all of us. From the staff that answered the phones to all of the great guides on the trips, we were very impressed.

Check out the Rocky Mountain Coaster in Copper! We had planned to take a ride on New Year's Day, but sadly it was closed due to the frigid temps. Instead, a ride on the Keystone Scenic Gondola had stunning views. Darrin and I never miss an opportunity to check out the gondolas whenever we travel.

We mostly dined out for lunch and a few places were excellent!

Sanchos in Breckenridge was a fun place with great street tacos and margaritas. Our last night in town we dined at Hacienda Real. Oh my! FANTASTIC! I’ve never had a spinach tamale, and it was life changing! They have won many awards for their authentic cuisine. The staff was great!

I am thankful for our dog sitter who loved Mickey while we were away. Our sweet birdies stayed at Burge Bird Services and all came home happy and healthy.

Soup’s On! I made this Minestrone for dinner last night. It was excellent and easy to make! The recipe makes a large pot!

On NYE, we stayed in (my favorite). We bought steaks locally and took our Sous Vide (we are now those people LOL). You must try my Oven Roasted Potatoes!

Movies! Don’t Look Up on Netflix was hysterical!! Leonardo, Meryl and Jennifer like you’ve never seen them before!

I am a huge 007 fan. So much so that I named one of my cars Vesper. Yes, I’m one of those people. The latest movie No Time To Die was exhilarating to say the least!
