Retro English Muffin Sandwiches

A childhood favorite of mine (and still is!)
Let's make sandwiches!
This is an easy, just wing-it kind of sandwich. I love making turkey with provolone and honey ham with cheddar. Serve with honey mustard on the side. These are easy and delicious.
Ingredients:
6 English Muffins, split
12 pineapple rings (drained well)
Butter for spreading on the English muffins
Provolone or Cheddar cheese (slices or shredded)
Honey Ham or Turkey - I like to add 2 slices to each muffin
Heat oven to 400 degrees. Line a cookie sheet with parchment paper. Spread softened butter onto each muffin half. Toast in oven for about 10 minutes.
While muffins are toasting, add a few teaspoons of olive oil to a warm skillet. Add pineapple rings and heat until slightly golden. Do not burn. Use your best judgement.
Add honey ham or turkey to the toasted muffins. Top with a pineapple slice and cheese of choice. Broil until bubbly. Watch carefully. Serve with honey mustard on the side.
I like to make extra for leftovers. Enjoy!
Mel's Honey Mustard
4 TBSP Mayonnaise
2 TBSP Honey
1 TBSP Whole Grain Mustard
1 TBSP Yellow Mustard
Mix all together and set aside. Great as a dipping sauce for fries and tots!
Do What You Want (DWYW)
Switch up the cheeses. Make vegetarian. Get creative on the bread you use.
My Mom made with ham and green chiles and used pepper-jack cheese. So good!
