Mel's Pimento Cheese Spread

A classic cheese spread that pairs great with sliced celery and crackers.



8 oz. block of sharp cheddar cheese, grated

1 cup shredded provolone, Monterey jack or mozzarella (your choice!)

4 oz. Diced Pimentos, drained

1/4 cup Mayonnaise (I prefer Dukes)

1/4 tsp. Garlic powder (not garlic salt)

1/4 tsp. Paprika

A few dashes of hot sauce (Franks)


In a large mixing bow, stir together the cream cheese, pimentos, mayonnaise, garlic powder, and paprika. Add a few dashes of hot sauce of your choice (I like Franks).


Stir in the shredded cheddar cheese and 1 cup of mild white cheese. Mix well and refrigerate for at least 1 hour. Serve with crackers and celery sticks.


Notes: I have used shredded mozzarella, provolone and Monterey cheese. I like to balance the sharp cheddar cheese with a milder white cheese. Experiment with different cheeses to find the flavor you love. The chive cream cheese is a MUST in this recipe. Enjoy!
