Creamy Chicken & Broccolini Soup

Melanie's Favorite Soup!
Ready in 1 about 1 hour
Serves 8 people

Ingredients
8 TBSP Butter (1 stick)
2 bunches of green onions, chopped
2 cups chopped celery
⅓ cup flour
2-½ cups chicken bone broth (see notes below)
1 lb. boneless chicken breasts or tenderloins (see notes below)
6 cups milk
Broccolini - 2 bunches (see notes below)
1 tsp. Celery Salt
1 tsp. Season salt of choice
½ tsp. Ground pepper
8 oz. Sour Cream
Shredded cheese for topping
Preparation
Add chicken to the stockpot and cover with the chicken bone broth. Simmer until cooked through (about 10 minutes). Set aside. SAVE THE BROTH! Chop the chicken and set aside.
In another stock pot, saute the chopped green onions and celery in the butter over medium heat until soft.
Add flour to the cooked vegetables to form a roux. Slowly add the reserved bone broth. Simmer until thickened (about 5 minutes).
Add the milk and simmer over low heat until warm. Add the chopped chicken and broccolini and simmer for about 10-15 minutes or until broccolini is tender. Stir often!
Add seasonings. Adjust to taste. Don’t oversalt.
Remove the soup from the heat. Add the sour cream and stir until combined.
Ladle into soup bowls and top with shredded cheese of choice. I love adding sharp white cheddar and medium cheddar.

Tips
I like to use boneless chicken tenderloins. Chicken bone broth or chicken stock work well with this recipe.
Broccolini - I love using it because the stalks are thin and tender. Use both the florets and sliced stalks in this recipe. So many good vitamins! Of course regular broccoli works great too!
