Blood Orange Olive Oil Loaf Cake

Make this cake! Blood Orange Olive Oil Loaf Cake. All I can say is WOW! It has lots of orange zest and the glaze is gorgeous! Everyone who was lucky enough to get a slice loved it!


Made White Chicken Enchiladas for dinner last night. So good! I used leftover rotisserie chicken and instead of flour tortillas I used corn. I prefer to make my enchiladas “stacked” style instead of rolling them. Simply add a little sauce to the bottom of the pan, add a layer of corn tortillas, and a layer of shredded chicken. Repeat the layer and then top with sauce and extra shredded cheese. The sauce is to die for!


I have leftover rotisserie chicken bones and will be making stock in the Instant-Pot. This recipe will make plenty to freeze for soups, sauces & other recipes.


On the menu for the weekend - Wild Rice Soup. I picked up a package of Minnesota Wild Rice the last time I was up north. Delish!!!!!!

Bucket list! Starlight Snow Chalets at The Kansas City Hotel. Oh how quaint!


Another bucket list - Cocktails and live music will always have my heart.
